Dear Mehdi,
For Density, as some friends mentioned before, you can use a densitometer. but about the contrast you have to keep in mind that in fact the contrast is not a quantitative factor. It is defined as "contrast is a difference between the density of two adjacent part of a film", so you can measure the density of two part of the film and the difference is related to the contrast. but please consider that transition in film density is usual, so measuring the contrast as a quantitative factor is not practical.
