your thickness is 8mm means width across the notch is less than 80% so you prefer to have subsized 5mm
New sub sized is ==10x5x55
Required sized is ==10x10x55
now temperature reduction is == -20-11.1== -31.1C and
Charpy energy if Original was 27J then new one as per A370 table-9 is 14J.

My question How much temperature will apply for testing (AWS D1.1)
"4.36.7 When sub-sized specimens are required, and the
width of the specimen across the notch is less than 80%
of the base metal thickness, the test temperature shall be
reduced in conformance with Table 4.15, unless otherwise
