This would appear to be similar to EN 1.4315 or similar to AISI 304LN but with higher carbon content. The only hits specifically for X5CrNiN 18 10 were several material certifications from a Russian manufacturer with chemistries similar to 304 with regard to Cr and Ni content.

By the way:

Uddeholm is a German company
X5 CrNiN 18 10 appears to be standard EN type notation indicating 0.05 carbon 18Cr 10Ni with the addition of nitrogen
UNI 7500-75 is UNI stand specification 7500, steels for pressure vessels, 1975 edition (ref. Key to Metals)

Designation would not support 310, Cr and Ni too high, or 312, Cr too high, for your designation. Good luck.
