    Please explain what  are the  criteria  to determine the  line  classes
  Is  it  mention  in drawings  or  contract documents?

If you are dealing with gas treating plants, sour gas is always a category M fluid.
In oil & gas processes wherever the fluid contains more than certain amounts of H2S, it makes it a category M fluid too.
