If you use GMAW alone with single V with 3mm root gap, I am sure you will get sound weld in single layer and no need go for back weld. Do some mockup using good welders to gain the confidence before you go ahead with PQR / propose to client.

For welding 6 mm with GTAW you have to make single V with root gap at least 3mm.and with just two-three passes you can fill up 6mm of grove. Before applying SAW you shall have atleast 5-7 mm of weld metal as back up to avoid burn through So in this case no point in using SAW.--
However if you want to use SAW to increase productivity, its better to go with Square butt with 0 (no) gap. I have tried this practically and achieved sound weld (RT without any defects) with good penetration.
