I did not understand your question?
 
You can calculate the Rate Of Heating / Rate Of Cooling from ratio of change in temp(DegC) to change in time (Hrs)...same as u calculate the slope of a straight line dy/dx.
 
Just calculate the total time taken in hours to reach 720DegC from 300DegC/ 400DegC
and calculate the ROH.
