Why is a full faced gasket required when a flat ring would be sufficient ?

We need to connect a Flanged Gate valve (RF) with Flange Adapter (FF). We are going to use full-faced EPDM gasket.
My questions are,
1. Will it be a leak tight joint?
2. Is it accepted as per code? (If Yes, Please give me reference standards)
