[MW:6506] Stainless Steel -Welding

Dear Friends,
                  I have a question regarding S.S materials welded with SMAW process. Usually we will go root with GTAW if the diameter is less than 24". Other than that we will go with SMAW process. But while welding with smaw process what is need to go backside welding?. why we can weld in oneside alone same like smaw welding in carbon steel. plz let me known the reason behind that. because i pratically checked out if it is welded with one side the other side look good   not bad. then why we are going for backside welding.
