Refer ASME B 31.3 Definitions you will get clear idea. these categories are based on service medium and risk associated with leakage of this service medium.Category M is for any minor leakage will result in fatal or seviere consequences .
Most of Piping coming under Normal Fluid service .
Category D -Fire water lines
